What am I?:                   I am a leafy green vegetable, just like collard greens.

When do I

grow best?:                   I am great in cold weather, planted in the spring and  picked  after the first frost in fall. I can even last in winter!

What vitamins and

minerals do I have?:    I am high in vitamin K, vitamin A and calcium: Good for healthy blood, eyes, and bones!

How do you eat me?:  I can be eaten raw or cooked.  Try me in salads, cooked with garlic, in a smoothie, or even made into chips!
